Potato Waffles Recipe with Egg and Cheese (using leftover mash)

Not only is this potato waffles recipe delicious, it’s also a great way to jazz up some leftover mash rescued from the fridge. All you need is a waffle maker (here’s a great value one similar to ours!). Try it out and let us know what you think in the comments!

Ingredients (Serves 2–3):

For the potato waffles recipe:
  • 2 cups cold mashed potato (firm, not runny)
  • 1 egg
  • 1/2 cup grated cheddar or tasty cheese
  • 2 tbsp plain flour (add more if mash is very soft)
  • 1 tbsp butter (melted)
  • Salt and pepper to taste
  • Optional: chopped chives, spring onion, or garlic powder
For topping:
  • 2–3 eggs (fried or poached)
  • Extra cheese for garnish
  • Optional: cooked bacon, avocado, or hot sauce

Instructions:

1. Mix the waffle batter:

  • In a bowl, mix mashed potato with the egg, cheese, flour, melted butter, and seasoning.
  • Stir until it comes together into a thick, scoopable batter. If it’s too loose, add a little extra flour.

2. Cook the waffles:

  • Preheat and grease your waffle maker.
  • Spoon the mixture in, spread slightly, and cook for 5–8 minutes until golden and crisp. Avoid opening the waffle maker too early — let them set and crisp properly.

3. Prepare toppings:

  • Fry or poach eggs while the waffles cook.
  • Prepare any extras like bacon, avocado, or spinach.

4. Serve:

  • Plate up the waffles, top with eggs and cheese, and serve hot!

    Dear grocery dad,
    The waffels are a great idea. But not having a waffle maker, I Think I Can Make burgers too! Same recipe I Think I Can Use.

      Definitely works! If you can squish them into the pan with a flat spatula, you’ll get some delicious crispiness. Plenty of butter in the pan 🙂
